Sausage Rolls

I must mention that all sausage meat is not created equal. Find a sausage
you love with your eggs in the morning and the fact that it leaves a lot of
grease in the frying pan is not necessarily bad. The best pastry recipe for
this is one made with butter. This will not be a low calorie snack, so don’t
try to make it that way. You want the best flavor you can get. When it has
finished baking in the oven it will be browned and it will be okay if the fat
from the sausage has seeped through. Remember…more flavor!

Really good sausages (casing removed) use about a third of a sausage
per pastry wrap.

Cut rolled out pastry into about a 3 to 4 inch square. Place sausage
meat in the middle and dampen edges with wet finger and fold sides
into the middle and pinch at top and ends. Make three slices on top to
the meat. This will allow the roll to cook and still stay together.
Place on cook sheet.

Cook in 400 degree oven for about 30 minutes. It should be browned and
meat should be cooked. You can always take one out and cut in half.

Pastry recipe: 3 cups flour
1 1/2 tsp salt
1 cup cold cut up butter
1/2 cup cold water
